Easy Au Gratin Potatoes

This easy recipe uses the canned sliced potatoes we have in abundance in our Food Pantry. Be sure to add the potatoes to your order!

Preheat oven to 400 degrees. Generously grease a 9×13 inch casserole dish. Makes 12 to 15 servings.

Ingredients

  • 6 cans of sliced potatoes, rinsed and drained
  • 4 – 6 cups of shredded cheese of your choice
  • 2 heaping tablespoons of white flour
  • 8 tablespoons of butter (1-1/2 sticks)
  • 2-1/2 cups of heavy cream or milk
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon ground mustard
  • 1/2 teaspoon black peper
  • 1/8 teaspoon of ground nutmeg

Instructions

  1. Melt 8 tablespoons butter in large sauce pan.
  2. Put sauce pan on medium heat.
  3. Slowly add 2 heaping tablespoons flour, whisking it into the melted butter, just until the mixture is a golden brown. Don’t let it burn.
  4. Slowly add 2-1/2 cups heavy cream while continuing to whisk.
  5. Add seasonings. Mixture should be slowly bubbling — turn up the heat slightly if it’s not, turn it down if it begins to boil rapidly.
  6. Slowly add the shredded cheese a couple of handfuls at a time, then stir and let the cheese you added melt before adding more. Reserve some cheese to be sprinkled on top of the final layer of potatoes and sauce.
  7. Add 1/3 of the potatoes to your casserold dish, spreading them out in a layer on the bottom. Then add 1/4 of the cheese sauce on top of the potatoes.
  8. Repeat the last step twice more but on the final time, use the all of the remaining cheese sauce.
  9. Sprinkle shredded cheese on top of the casserole.
  10. Bake uncovered for 1 hour at 400 degrees. It should be golden brown on top and bubbly.
